What does it mean?

Harry: Amanda never said how attractive you were.
Sally: Well, maybe she doesn't think I'm attractive.
Harry: I don't think it's a matter of opinion, empirically you are attractive.

"Empirically" is a way of saying that something is a scientific fact. Therefore, it cannot be argued with.

So, Harry is saying that Sally is attractive, and that it is impossible to not think that she is attractive.
